Pita Bread



I've been wanting to try my hand at making homemade pita bread for a while now. Pita bread is so yummy, but it is really expensive in the stores (at least where I live). This is my first time making pita bread and I was really happy with how it turned out. It was really yummy! We used it for pita pocket sandwiches and for pita pizzas this week. Plus I tried some out warm with butter on it. All of these uses were a hit with us! So here is the pita bread recipe...which is from About.com.


Whole Wheat Pita Bread
2 1/2 cups warm water (110 degrees)

1 1/2 tsp. active dry yeast

1 T. honey
2 cups wheat flour
3 cups all purpose flour
1 tsp. salt

1 tsp. vegetable oil

Dissolve yeast in warm water. Add honey and stir until dissolved. Let sit for 10-15 minutes until water is frothy.


Combine white flour, wheat flour, and salt in large bowl. Make a small depression in the middle of flour and pour yeast water in depression. Stir with wooden spoon or rubber spatula until dough becomes elastic.

Place dough on floured surface and knead for 10-15 minutes. When the dough is no longer sticky and is smooth and elastic, it has been successfully kneaded.

Coat large bowl with vegetable oil and place dough in bowl. Turn dough upside down so all of the dough is coated with oil. Allow to sit, covered, in a warm place for about 3 hours, or until it has doubled in size. (Mine didn't take that long!)

Once doubled, roll out in a rope, and pinch off 10-12 small pieces. Place balls on floured surface. Let sit covered for 10 minutes. Preheat oven to 500 deg F. and make sure rack is at the very bottom of oven. Be sure to preheat your baking sheet also.

Roll out each ball of dough with a rolling pin into circles. Each should be about 5-6 inches across and 1/4 inch thick.

Bake each circle for 4 minutes until the bread puffs up. Turn over and bake for 2 minutes. Remove each pita with a spatula from the baking sheet and add additional pitas for baking. Take spatula and gently push down puff. Allow to cool before placing in storage bags.

My Notes
*I think next time I will switch the ratio of wheat/white flour so that it is more wheat than white. I didn't have a rolling pin so I just used my hands. I think a rolling pin would work better though. Also be sure not to get it too thin in any area or it will not puff up when you bake it and then will not separate right when you try to open the pocket.


Storing Pita Bread
Pita bread can be stored for up to a week in a pantry or bread box, and up to a month in the freezer. Be sure to use freezer bags when storing in the freezer.
Pita bread dough can also be refrigerated for up to one week in the refrigerator.

Just enough light for the step I'm on


Being a mom of 3 under two is not easy most of the time. Yes, I have grown used to it mostly, but it still is very challenging. At times I still wonder why God chose me, now, for this. But I know that it is for His own glory and that He will be faithful to continue to give me all that I need to complete this task.

Sometimes I want to see the big picture. To just step back and see everything through God's eyes. But mostly, I am glad that I can't see it all. Because if I could, I might not want to keep on walking. Here, where I am, God has given me just enough light for the step I'm on. I will continue to trust Him to light the next step as I continue to climb in obedience and with joy.

I also get frustrated often as I think of all the things that I can't do right now. Things like being more involved in church and ministry. Things like having more time to devote to supplementing my husband's income. And I want to be able to go places without help. (I don't even attempt grocery shopping with the girls alone.) All these things I know are good things...but being here at home with my girls, training them, cooking for my husband and children...that is good too. In fact, because God has me here, now, this is the better thing.

So I will purpose again to enjoy this season and to look for what God wants for me to learn and do while I'm here.

I enjoy reading a lot, and I love a good book. Even better, is a good, FREE book. That's why I love PaperBack Swap. I joined PaperBack Swap several months ago after a personal recommendation from my mom. I had heard of it before then, but wasn't really sure how good it was and I tend to be kind of skeptical of stuff like this. However, my experience has been great! I have had the opportunity to read many books for free that I could not otherwise afford.

Here's how it works. You list the books that you want to get rid of, and when someone else requests your books, you get 1 point for each one that you mail. Then you can use your points to request the books that you want from others. Coconut Milk Ice Cream

We made some very yummy homemade ice cream today. This is a blender ice cream, so it's really simple and easy to make, and doesn't require an ice cream maker. Plus, as an important added bonus...it is actually good for you! No sugar, no preservatives, and no artificial ingredients. So without further ado, here's our yummy homemade ice cream recipe! I hope you enjoy it as much as we did!!

Coconut Milk Ice Cream

1/2 can coconut milk (refrigerate before using- shake well)
1/2 tsp. vanilla
2-3 frozen bananas

Put all ingredients into blender and blend until smooth. It's that simple! I do like to slice the bananas before I freeze them. This helps them to break up easier.

I think we may try some other flavors next time, so here are some ideas of add-ins.
blueberries
strawberries
raspberries
mango

For added nutrition, try adding:
ground flaxseed
wheat germ


*This ice cream is a soft serve ice cream and I haven't tried freezing it so I don't know how well it will freeze. That's not a problem at our house though since we can eat up a whole recipe at a time!
